Ingredients:
- 4 Chicken Breasts
- 1/2 tsp Sea Salt
- 1/2 tsp Black Pepper
- 1/2 TBSP Ghee or Grass-Fed Butter
- 4 pieces of Bacon
- 1/3 cup Mayonnaise
- 2 1/2 TBSP Mustard
- 1/4 cup Honey
- 1 tsp Onion Powder
- 1/4 cup Mozzarella (Optional)
- Cover a cookie sheet (that has a lip around it!) with foil. Place a metal wire rack on top of the layer of foil. Place the 4 pieces of bacon on the wire rack. Slide the cookie sheet, bacon and all, in a 375 oven. Cook bacon for 30 minutes.
- Mix Mayo, mustard, honey and onion powder in a small bowl and set aside
- Season both sides of chicken breast with salt and pepper
- Melt ghee in an oven safe heavy skillet (like a cast iron skillet) over a medium heat. Add chicken and cook 8 minutes per side.
- Spread 1/2 tablespoon of honey mustard over each chicken breast.
- Crumble 1 piece of bacon per breast
- Top with cheese if using
- Place skillet in a 350 oven for 10 minutes.
