Taco Tuesday!

Who else celebrates Taco Tuesday?  My oldest daughter lives for Tuesdays for this very reason.  To be honest, though, we don't always celebrate on Tuesdays.  Some weeks it's Taco Wednesday or Taco Friday.  Regardless, the beloved meal gets celebrated at least once a week in my house!  Below you will find recipes for homemade taco seasoning, homemade salsa, and homemade guac!  Everything can be made ahead of time, especially the taco seasoning and salsa.  I usually made the guacamole while my meat is browning.



If your dietary restrictions prevent you from eating corn or flour tortillas use this recipe for Paleo tortillas.  Otherwise, fry a white corn tortilla in your favorite oil until golden brown for a fresh taco shell experience.


Taco Seasoning Ingredients:
  • 1 tsp Cayenne
  • 1 tsp Black Pepper
  • 3 TBSP Chili Powder
  • 2 TBSP Ground Cumin
  • 1 TBSP Paprika
  • 1 TBSP Dried Oregano
  • 1 TBSP Onion Powder
  • 1 TBSP Garlic Powder
  • 1 TBSP Sea Salt
Here's what ya do:

Mix all the spices together.  Use 2 TBSP of Taco Seasoning per 1 pound of meat.  Store the leftover seasoning blend in an airtight container or ziplock bag.

Salsa Ingredients:
  • 3 cans Organic Diced Tomatoes
  • 1 Medium Onion diced
  • 5 Cloves Garlic; whole
  • 2 Cayenne Peppers OR 4 Jalapeno Peppers; tops cut off
  • 1/2 cup Vinegar
  • 1 TBSP Honey
  • 1 heaping TBSP Sea Salt
Here's what ya do:
  1. Puree all ingredients in a food processor or blender until it reaches your desired texture.
  2. Pour salsa into a large skillet or stockpot and boil over a medium-high heat for 45 minutes stirring occasionally.
  3. Store in a mason jar in the refrigerator.



Guacamole Ingredients:

  • 1 large Avocado
  • 2 TBSP Mayonnaise
  • 1 1/2 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Salt
  • 1/2 tsp Lime Juice
Here's what ya do:

Combine all ingredients in a food processor or blender and pulse until desired texture.
