Caramel Apple Crunch with Banana Nice Cream

 
paleo, dairy free, gluten free and grain free dessert
 
There are just simply some meals or days that should be ended with a fabulous sweet treat.  My Caramel Apple Crunch with Banana Nice Cream is an elegant blend of warm earthy flavors and sweet creamy goodness.  Skip the refined sugars and inflammatory flour crusts and indulge in this treat the next time your sweet tooth begins to scream!
 
Don't get the palpitations and hide behind the couch when you see that this dish has 3 separate recipes!  All 3 are quick and easy (as long as you don't count the time it takes to freeze the banana for the Nice Cream).  Just look at it as 3 steps to complete something pretty magical.
 
The Apple and Nice Cream recipes will make 2 servings
 
~Caramel Apples
 
Ingredients:
 
  • 1 Gala Apple
  • 2 TBSP Ghee
  • 1 TBSP Honey
  • 1/2 tsp Cinnamon
  • dash of sea salt
Directions:
  1. Peel and slice apple in thin slivers. 
  2. Melt Ghee over medium heat. 
  3. Add Apples and remaining ingredients. 
  4. Cook over medium heat for 5 minutes stirring often to prevent caramel sauce from burning
  5. Remove from heat and transfer immediately to serving plate
  
 
Ingredients:
  • 1/2 cup each - pecans, walnuts and almonds
  • 1/2 cup Medjool Dates
  • 1 TBSP Coconut sugar
  • 1/2 tsp Vanilla Extract
  • 1/2 tsp Kosher Salt
 Directions:
  1. Place nuts in a food processor and blend until you have small chopped pieces (about 15 seconds)
  2. Add pitted dates, coconut sugar, vanilla extract and salt.
  3. Blend until a sticky meal is formed.
This recipe will make more than what you will need for our magical dessert so be creative and think of different things to top off with it or simply eat it by itself!
 
~Banana Nice Cream
 
Ingredients:
 
  • 1 frozen Banana
  • 1/4 cup Almond Butter
  • 1/4 cup Almond Milk or Coconut milk
 
Directions:
  1. Peel frozen banana
  2. place in a food processor along with remaining ingredients. 
  3. Pulse until smooth.
