One of the things I love most about winter time is ability a bowl of soup has to warm you up. Add to it a super soft blanket, roaring fire in the fireplace and a quiet house and that is my recipe for a perfect afternoon. Who am I kidding? It's never quiet at my house for a whole afternoon. 30 minutes is more like it and I wouldn't have it any other way!
Here is a great recipe for a hearty soup that will guarantee to keep you warm on those cold and wet days. Follow the recipe below or substitute the herb ingredients with 2 TBSP of taco seasoning for a spicier option.
Ingredients:
- 8 skinless boneless chicken breast
- 2 TBSP Italian Seasoning
- 1TBSP Dried Basil
- 2 Cloves Garlic, minced
- 1 large Onion; chopped
- 2 14 oz cans of coconut milk (shake before opening can to avoid separation)
- 2 14 oz cans Diced Tomatoes (with juice)
- 2 cups of Chicken Broth
- 1 6 oz can of Tomato Paste
- 1/2 can of tomato sauce (Or even better, make your own! I'll give you a recipe soon)
- Sea Salt and Pepper to taste
Directions:
Put all the above ingredients into the crock-pot and cook on high for 6 hours or low for 9 hours. After suggested time, remove chicken and shred with two forks. Return shredded chicken to crock-pot and keep warm until ready to serve.
