Mulligatawny Soup

































Mulligatawny Soup

Mulligatawny is an Indian recipe. The name originates from the Tamil words mullaga/milagu and thanni and can be translated as "pepper-water".  One of the major spices in this soup is Curry Powder.  Did you know Curry is a blend of spices used in Indian cuisine.  Some of the most common ingredients in curry include turmeric, fenugreek, coriander, cinnamon and ginger. Mustard seed, cayenne pepper and cardamom are also often included in curry spice mixtures. Many of these ingredients provide considerable potential health benefits such as lowering cholesterol, controlling blood sugar, anti cancer benefits and detoxification.

Ingredients:
  • 3 TBSP grassfed butter
  • 1 medium Yellow Onion; diced
  • 1 chicken breast; diced
  • 3 cloves Garlic; minced
  • 1 Green Apple; diced
  • 1/4 cup Arrowroot Powder
  • 1 TBSP Curry Powder
  • 32 oz Chicken Broth
  • 1 can Coconut Milk
  • 1 TBSP Coconut Sugar
  • 1 tsp Salt
  • 1 tsp Black Pepper


Here's what ya do:

  1. Melt butter in a stock pot over medium heat.  Add diced chicken and cook until golden brown; about 6 minutes

    2.  Add garlic and cook until fragrant; about 1 minute
    3.  Add arrowroot powder and stir

    4.  Very slowly, whisk in the chicken broth.  You want to add this seriously slow so that the arrowroot has the chance to thicken your liquid as you go. 
    5.  Add coconut milk, curry, coconut sugar, salt and pepper.
    6.  Simmer on low heat for 20 minutes.
    7.  Add diced green apples
    8.  Enjoy!
