Roasted Green Beans, Garlic and Bacon






















This is my all-time favorite side dish!  How can you possibly go wrong with bacon?  Answer; you can't!  The original recipe from Michelle Tam over at Nom Nom Paleo calls for broccoli rather than green beans.  It is pretty fantastic also but I have found that the marriage of flavors between the green beans, garlic and bacon is an ultimate.  It just doesn't get much better than this, y'all!  An added bonus is that the prep time for this dish is super short.

Roasted Green Beans, Garlic and Bacon
You will get about 4 side dish portions from this recipe
  • 1.5 lb Fresh Green Beans; ends snapped (fresh green beans will have more of a crunch after roasting time) or 2 14.5 oz cans of Cut Green Beans
  • 4 pieces of Bacon; diced
  • 3 cloves Garlic; sliced
  • 1 TBSP Avocado Oil
  • Sea Salt and Pepper to taste
Here's what ya do:
  1. Preheat oven at 375
  2. Cover a cookie sheet with foil
  3. Dump the green beans, oil, garlic, salt and pepper on the cookie sheet.
  4. Peel apart the chopped pieces of bacon and spread amongst the beans.
  5. Pretend like you are back in your childhood playing in the backyard mixing up a "salad" made of grass, berries, pine cones and tree bark.  That was just me?  Ok... anyway....
  6. Use your fingers to mix everything together making sure each component gets to say hello to each other.  It's truly the best way to finish this dish!
  7. Evenly spread the ingredients out on the cookie sheet.
  8. Roast in the oven for approximately 30 minutes or until bacon is browned. Some of the green beans may look alarmingly burned but don't fear!  These are actually the best beans in my opinion!
  9. Enjoy warm or at room tempature
