This "dream", if you will, all got started when the local news did a segment this past Tuesday stating that it was National Pancake Day. Never have I ever worried about such a thing. This day, however, it struck me like someone was challenging me to come up with something different. I'm thinking that I have accomplished quite the task... at least in the paleo world. This is no where near what you want to eat if you are working on losing weight. If you are dead-set on rebelling for a meal but want to stay paleo or if you battle food allergies or sensitivities, this is for you!
Ingredients:
Almond Pancakes
- 1 1/2 cup Almond Flour
- 1/2 tsp Baking Soda
- 1 TBSP Tapioca Flour
- 1/4 tsp Sea Salt
- 2 tsp Vanilla Extract
- 3 large Eggs
- 4 TBSP Coconut Milk
- 2 TBSP Honey
- Fat of choice for cooking
- 1/2 cup Cocolate Chips from Enjoy Life
- 1 TBSP Honey
- 2 TBSP Coconut Milk
- Your favorite store bought sugar free Cashew Butter
- 2TBSP Grass-Fed Butter or Ghee
- 2 TBSP Coconut Sugar
- 3 TBSP Coconut Milk
- 1 can Peach slices (packed in fruit juice with no added sugar!)
- 2 tsp Vanilla Extract
Here's what ya do:
For the pancakes
- Place all the ingredients in a food processor and blend until well combined and smooth
- Melt your fat of choice, like coconut oil or butter, in a cast iron skillet over medium heat.
- Add 1/3 cup of batter to the hot skillet and cook for 3 minutes per side or until golden brown.
- Repeat step 3 until you have cooked all of the batter adding fat only when needed.
- Heat chocolate chips, honey and coconut milk over low to medium heat until chocolate has fully melted and all the ingredients are well combined.
- Melt butter in a sauce pan over medium heat.
- Whisk in coconut sugar and coconut milk and let mixture come to a gentle boil. Continue boiling for 3 minutes and allow caramel to thicken slightly. You want the consistency of a jarred caramel or chocolate sauce.
- Stir in minced peaches and vanilla. Continue cooking over medium heat for 5 more minutes.
Place a pancake on your plate and top with cashew butter. Place another pancake on top of the cashew butter and top that pancake with the chocolate gravy. At this point you can either finish things off with a final topping of the caramelized peach jam or you can add a third and final pancake and top that with the caramelized peach jam. Either way, it is indulgently delicious! Enjoy!
