This is a great and tasty way to use the extra veggies in your fridge that are on the verge of going bad. Thanks to my husband, my freezer is always stocked with deer meat so I decided to add a spicy jalapeno deer sausage to my hash. If you're not a sausage eater, simply substitute it for another type of meat with a spicy kick like chicken breasts that have been cooked in a crock pot on low for 6 hours with homemade salsa (of course, then you would have to change the title of the dish to Chicken Hash!). The idea is to keep this a simple and fresh dish loaded with exciting flavors from the meat. Now that you have 2 recipes in one you are all set!
Sausage Hash

Serves 2
Ingredients:
- 1 TBSP Coconut Oil
- 1 Green Bell Pepper; diced
- 1 medium head of Broccoli; diced
- 1 medium Sweet Yellow Onion; diced
- 2 small Sweet Potatoes
- 1 TBSP fresh squeezed Lemon Juice
- 1 pinch Sea Salt
- 1/4 lb Deer Sausage or other high quality sausage
Here's what ya do:
- Dice bell peppers, onions and broccoli into bite size pieces.
- Slice sweet potatoes into small strips with a medium julienne blade.
- Slice sausage into bite size pieces
- Throw sausage in a medium skillet heated over medium heat. Cook for about 4 minutes on each side until sausage is golden brown and internal temp reached recommended temp on package.
- Meanwhile, melt Oil in a large skillet over medium heat.
- Combine veggies, lemon juice and salt in skillet and sauté for 10 minutes or until veggies are just becoming soft but still have a slight crisp.
- Stir sausage in with your sautéed veggies and dish out on a plate.
- Enjoy!
