Coconut Crunch Pork Chops with Garlic Honey Sauce


I don't know about you, but I get bored very quickly with pork chops!  Chops most definitely don't rank on the top of my meat charts.  That was until this recipe came up!  If you are a regular reader, you've probably drawn the same conclusion about my tastes that I recently did.  In my world, a good sauce takes any meat to the next level!  Especially a sauce that has honey in it!

 

Coconut Crunch Pork Chops with Garlic Honey Sauce

serves 6

Ingredients:
  • 6 pork chops; well trimmed
  • 1 cup Shredded Coconut
  • 2 tsp Sea Salt
  • 2 tsp Black Pepper
  • 1 1/2 TBSP Ground Ginger
  • 1 TBSP Ground Nutmeg
  • 1 tsp Ground Thyme
  • 1 tsp Ground Sage
  • 1 TBSP Paprika
  • 1/2 tsp Cayenne Pepper

For the Honey Garlic Sauce
  • 2 TBSP Grapeseed Oil
  • 3-4 cloves Garlic; minced
  • 1 cup Honey
  • 2 TBSP Coconut Aminos or Gluten Free Soy Sauce
  • 1 tsp freshly grond Black Pepper


Here's what ya do:
  1. Combine coconut and spices in a large zip lock bag.  Shake until well mixed.
  2. Throw the pork chops one at a time in the zip lock bag and coat well with the spice mixture.  Once coated, place pork chops on a parchment paper covered cookie sheet.
  3. Bake for 15 minutes and then flip each chop and bake for 15 more minutes or until fully cooked.
  4. Meanwhile, in a medium sauté pan, heat oil over medium heat.  Saute minced garlic until fragrant, about 30 seconds. 
  5. Stir in honey, soy sauce and pepper.  Cook over a medium heat until sauce bubbles and thickens stirring frequently for about 10 minutes.
  6. Enjoy!
