I don't know about you, but I get bored very quickly with pork chops! Chops most definitely don't rank on the top of my meat charts. That was until this recipe came up! If you are a regular reader, you've probably drawn the same conclusion about my tastes that I recently did. In my world, a good sauce takes any meat to the next level! Especially a sauce that has honey in it!
Coconut Crunch Pork Chops with Garlic Honey Sauce

serves 6
Ingredients:
- 6 pork chops; well trimmed
- 1 cup Shredded Coconut
- 2 tsp Sea Salt
- 2 tsp Black Pepper
- 1 1/2 TBSP Ground Ginger
- 1 TBSP Ground Nutmeg
- 1 tsp Ground Thyme
- 1 tsp Ground Sage
- 1 TBSP Paprika
- 1/2 tsp Cayenne Pepper
For the Honey Garlic Sauce
- 2 TBSP Grapeseed Oil
- 3-4 cloves Garlic; minced
- 1 cup Honey
- 2 TBSP Coconut Aminos or Gluten Free Soy Sauce
- 1 tsp freshly grond Black Pepper
Here's what ya do:
- Combine coconut and spices in a large zip lock bag. Shake until well mixed.
- Throw the pork chops one at a time in the zip lock bag and coat well with the spice mixture. Once coated, place pork chops on a parchment paper covered cookie sheet.
- Bake for 15 minutes and then flip each chop and bake for 15 more minutes or until fully cooked.
- Meanwhile, in a medium sauté pan, heat oil over medium heat. Saute minced garlic until fragrant, about 30 seconds.
- Stir in honey, soy sauce and pepper. Cook over a medium heat until sauce bubbles and thickens stirring frequently for about 10 minutes.
- Enjoy!
