Chicken Waffles with Basil Garlic Aioli

































This has all the characteristics of a fantastic Southern dish but without all of the grains!  The original recipe for the waffle was for a sandwich from So Let's Hang Out.  After a little personal preference tweaking I finally became satisfied with what I had created.  The main ingredients in the waffle is sweet potatoes, raw cashews and eggs.  I know it sounds like a really weird and scary combination if you aren't used to cooking this way, but just trust me and give it a whirl!  It is pretty fantastic! 


Ingredients for Sweet Potato Waffles:
  • 3 large Eggs
  • 1 cup Coconut Milk
  • 1 medium Sweet Potato; skin removed
  • 3 TBSP grass fed butter, melted
  • 1 cup Raw Cashews
  • 1/4 cup Tapioca Flour (sometimes called Tapioca Starch)
  • 1 tsp Baking Soda
  • 1 TBSP Raw Honey
  • 1/4 tsp Sea Salt 
  • Coconut Oil to grease the waffle iron.
 
 
Here's what ya do for the Waffles:
 
  1. Blend all the ingredients together in a food processer or blender.
  2. Spray waffle iron and pour 1/2 cup of batter or just enough to fill the plate of the waffle iron.
    3.  Cook until ready light appears; about 4 minutes on my waffle iron. 
    4.  Carefully remove waffle to a plate.  Repeat the process to make 5 waffles.
 
Ingredients for Fried Chicken:
  • 4 boneless skinless Chicken Breasts
  • 1 tsp Sea Salt
  • 1 tsp Black Pepper
  • 3/4 cup Almond Flour
  • 3 TBSP Grass-fed butter
Here's what ya do:
  1. Melt butter in a heavy skillet over medium heat
  2. Dice chicken into bite size pieces.
  3. Season chicken with Sea Salt and pepper.
  4. Dredge chicken in almond flour.  Shake off any excess flour
  5. Cook the chicken for a total of approximately 6 minutes turning each piece so that all sides are cooked until golden brown and the middle is no longer pink in the middle.
  6. Remove chicken to a paper towel to absorb any excess grease.
Ingredients for the Basil Garlic Aioli

  • 1 Egg Yolk
  • 1 tsp Lemon Juice
  • 1 tsp Apple Cider Vinegar
  • 1 tsp Dijon Mustard
  • 1/2 cup Avocado Oil
  • 4 basil leaves, chopped
  • 1 clove Garlic

Here's what ya do:
 
Throw all the ingredients into a food processor or blender and puree until smooth and creamy; about 2 minutes.  This is a great salad dressing as well if you have left overs! 
 
To assemble chicken waffles, simply lay a waffle on a plate, top with chicken followed by Aioli.  Enjoy!
