Italian Herb Chicken

This is my new favorite chicken marinade.  It is incredibly quick and easy to mix up, dump in a zip lock with your chicken and throw in the fridge before you leave for the morning.  The marinade is similar to a zesty Italian dressing but with a few minor changes that make a big impact!

Ingredients:
  • 3 TBSP White Wine Vinegar
  • 1 TBSP Dijon Mustard
  • 1/4 cup Avocado Oil
  •  1/2 tsp Onion Powder
  • 2 cloves Garlic; minced
  • 1 tsp dried Thyme
  • 1 tsp dried Basil
  • 1 tsp dried Oregano
  • 1/4 tsp Crushed Red Pepper
  • 1/4 tsp Sea Salt
  • 1/4 tsp fresh cracked Black Pepper
  • 5 Boneless Skinless Chicken Breasts
Here's what ya do:
  1. Combine all ingredients in a small bowl.
  2. Place chicken breasts in a gallon size zip lock bag.
  3. Add marinade to chicken.
  4. Toss in the fridge for 4 or more hours (I left mine in for 8 hours).
  5. Place each chicken breast on the grill or cast iron grill plate for the stove top.  Carefully top each breast with left over marinade from the bag.
  6. Grill chicken 8 minutes per side or until internal temperature reaches 165 degrees.
