Ratatouille's Ratatouille

































Parents with young children will hopefully be able to relate with me when I say that my kids tend to go on a food strike from time to time.  When this happens, I like to get them eating again by finding a great Disney movie we are all in the mood to watch and cook a dish that appears somewhere in the movie.  If you think hard enough, most Disney movies have at least one recipe that is shared by the characters.  Ratatouille is a very easy side dish that goes well with most meats and is from the obvious Disney movie, Ratatouille.

Ingredients:
  • 1/2 Yellow Onion; finely chopped
  • 2 Cloves garlic; thinly sliced
  • 1 cup Tomato Sauce
  • 2 TBSP Olive Oil
  • 1 small Zucchini
  • 1 small Yellow Squash
  • 1 sprig Thyme
  • Sea Salt and Fresh Cracked Pepper
Here's what ya do:

  1. Preheat oven to 375
  2. Trace the bottom of a 2 quart oval baking dish on parchment paper and cut out.  Set aside.
  3. Pour tomato sauce into the bottom of an oval baking dish.
  4. Drop garlic and onion into sauce and stir together along with 1 TBSP Olive Oil.  Season generously with salt and pepper.
  5. Trim ends off veggies.  Use a mandolin to cut squash into 1/16 inch slices.
  6. Arrange veggies following curvature of dish alternating between yellow squash and zucchini.

   7.  Drizzel with remaining 1 TBSP olive oil and season with salt and pepper
   8.  Top with a sprig of thyme
   9.  Cover with parchment paper and bake for 45 minutes

  10.  Remove thyme and enjoy!
