Cajun Smothered Pork Chops

































Did you know cayenne pepper is used for various problems with digestion including upset stomach, intestinal gas, stomach pain, diarrhea, and cramps. It is also used for conditions of the heart and blood vessels including poor circulation, excessive blood clotting, high cholesterol, and preventing heart disease.  Get a small dose of cayenne pepper in my Cajun Smothered Pork Chops.

Ingredients:
  • 4 thin cut Pork Chops
  • 1/4 tsp of each Sea Salt and Black Pepper
  • 1/4 tsp Cayenne Pepper
  • 2 TBSP Ghee
  • 1/4 cup Almond Flour
  • 1 medium Green Bell Pepper; sliced in strips
  • 1 medium Red Bell Pepper; sliced in strips
  • 1 Yellow Onion; sliced in strips
  • 3 Cloves garlic; minced
  • 1 cup Beef Broth

Here's what ya do:
  1. Dust chops with salt, black pepper and cayenne pepper. 
  2. Dredge in almond flour.  Shake off excess flour
  3. Melt ghee in a large skillet over medium heat.  Fry chops for 3 minutes on each side.  Move chops to a plate and cover with foil.
  4. Throw peppers and onions in the same skillet used to cook chops and sauté until softened; about 3 minutes.

    5.  Stir in Garlic and cook for 1 more minute.
    6.  Remove veggies from skillet.  Put the chops as well as any accumulated juices back into the skillet and then cover with veggies.
    7.  Add broth.

    8.  Cover skillet with foil and simmer for 45 minutes.
    9.  Transfer pork chop to plate and top with veggies.  Enjoy!
