The Devil's Crepe

































This little treat is so good, you will feel incredibly guilty for indulging in it!  The good news is, while you don't want to eat this everyday, it's really not that bad for you as long as you use the right ingredients! 

This was my first experience using Tapioca Starch (or tapioca flour) as one of the main ingredients.  I was pleasantly surprised by the texture of my crepe.  It had a fabulous crisp around the edges while the inner part had a great elasticity quality that reminded me of marshmallows. 

The Devil's Crepes

Ingredients:
  • 1 cup Tapioca Starch (sometimes called Tapioca Flour)
  • 1 cup Full Fat Coconut Milk
  • 1 egg
  • Pinch of Sea Salt
  • 1 TBSP Ghee or Grass Fed Butter
  • 1 TBSP Almond Butter
  • 1 TBSP Enjoy Life Semi-Sweet Morsels
Here's what ya do:
  1. In a small bowl mix tapioca starch, coconut milk, egg and salt until smooth.
  2. In a nonstick skillet, melt ghee over medium heat.
  3. Pour 1/3 cup tapioca batter into skillet and swirl around to cover whole skillet.
  4. Let crepe cook for approximately 3 minutes on each side until lightly golden brown.  Remove to a clean dish towel.
  5. Spread almond butter on warm crepe and sprinkle with chocolate chips.  Fold in half and enjoy this little devil!
